THE REVERIES: THE DEEP Kentucky Straight Bourbon Finished In French Oak Casks
1 Per Person Limit.
T8KE's Tasting Notes:
-
- Nose: Heavy baking spice opens with black pepper, mocha, creme brulee, a hint of blackberry, rich oak, caramel candies and a touch of cola; candied ginger and powerful toffee.
- Taste: Viscous palate, heavy and dense: mocha, ginger, maple, creme brulee hits over and over with an undertow of blackberry reduction, vanilla, toffee and black pepper.
- Finish: Woody and deep on the finish with gobs of vanilla bean, toffee, cola, currant, fig, black pepper, ginger, cocoa and spice.
- Overall: The depths beckon.
The Reveries: THE DEEP
Kentucky Straight Bourbon Finished in French Oak Casks. Cask Strength.
The Deep (Tide 1) represents the inaugural surge into secondary maturation for The Reveries. This isn't a surface-level finish; it is a structural transformation. We took a mature Kentucky Straight Bourbon and plunged it into toasted French Oak casks, allowing the tight-grained European wood to impart a silky tannin structure and a dark, dessert-forward complexity that standard American oak cannot reach.
The Profile: Elegance in the Abyss
Bottled at a robust 116.8 Proof, Tide 1 was selected specifically for its "fat," oily mouthfeel. The high-rye Kentucky base provides the power, while the French Oak provides the velvet.
Nose: An immediate, decadent bouquet of blackberry jam, toasted brioche, and wildflower honey. As it breathes, sophisticated notes of sandalwood, espresso grounds, and a hint of dark chocolate emerge from the French Oak influence.
Palate: Massive and mouth-coating. The viscosity is the star here—heavy layers of caramelized peaches, crème brûlée, and maple syrup collide with a sudden wave of baking spices (clove and nutmeg). It is rich, dark, and unapologetically bold.
Finish: A long, resonant exit. The French Oak provides a refined, drying tannin that balances the sweetness, leaving a trail of cinnamon-dusted pecans, aged leather, and a whisper of ginger snaps.
The Art of the Finish
Hand-selected by T8ke (Jay West), Tide 1 is presented in its purest form. No chill filtering, no added coloring, and no proofing down. It is the raw, unadulterated dialogue between Kentucky spirit and toasted French wood.
